Chinese food take-out is something we’re guilty of eating in our home. I love it. The kids love it. Even the husband loves it. My daughter and I are big fried rice eaters, and it’s not the healthiest of treats. She wants it often, so I had to figure out a way to make it at home, with a little more “health” mixed into the recipe. Off to pinterest to find something. I lucked out. We’ve got another Pinterest victory with a recipe for Better than Takeout Chicken Fried Rice from Rachel Schultz.
Better than Takeout Chicken Fried Rice
I strayed a bit from the original recipe Rachel Schultz has on her website. I didn’t use white rice, instead I went with whole grain rice. Just a little healthier. The eggs were organic. I tried to keep it as healthy as I could, so we could enjoy it often without much guilt!
Thankfully, Little Miss loved it. Although, she said she could do without the carrots…..she prefer raw carrots, to cooked carrots. I get it. I’ve made the note on my recipe page! Next time I’ll just put frozen peas in it, instead.
