Sure, spring is heading our way. Warmer days are just around the corner. However, soup is something we all eat throughout the year! Have a cold? Eat some chicken soup. Feeling achy from the flu? Here’s a hot bowl of soup. It’s why I’m sharing the best chicken soup recipes my family batch makes, then freezes! Along with two amazing Turkey Soup Recipes we love, and eat throughout the year.
Three Best Chicken Soup Recipes
Need a little chicken soup for your soul? I got you!
Chicken and Rice Soup Recipe
It’s simple, but so good. A little Chicken and Rice Soup makes the world a better place. Nothing crazy added. Not a complicated recipe. Simple, easy and fast – make a big batch (we double and sometimes triple the recipe) and freeze it in single servings for quick meals no matter what season! It’s even got veggies in it, so it’s got an added healthy situation happening!
Lemon Chicken Orzo Soup
My daughter and I are HUGE lemon fans. We even add lemon to things that normally don’t ask for lemon. Lemon just makes us happy, and this Lemon Chicken Orzo Soup is light, but so tasty. We add extra lemon juice, and I’ve even put the lemon carcasses in the pot as the soup simmers.
Lemon is the absolute star, for sure. If you don’t love lemon, leave it out of the recipe. No big deal. But, then you could just make the recipe above with orzo instead of rice if you’re not a lemon lover.
Avgolemono Chicken Soup
Greek food is probably my absolute favorite food of all time. Finding this simple Avgolemono Chicken Soup recipe thrilled me. It’s a lemon-based soup, and you truly have to love lemon to enjoy this one. It’s a bit creamier and dreamier the more you warm it up, and I love making it for Little Miss.
Two Amazing Turkey Soup Recipes
Turkey Kale Soup
Don’t turn your nose up! Kale isn’t the enemy. Granted, I actually enjoy it in my green smoothies, along with my soups….. but, even my teenaged daughter loves this Turkey Kale Soup. It has many of our favorite things – ground turkey, kale, carrots, and, onion. No, no lemon, but I’m pretty sure I’ll end up trying lemon in it at some point!
For now, I make the traditional Turkey Kale Soup as is and we freeze the rest for future meals. It says it’s slimming, but honestly, I don’t think we’ve lost any weight eating it. Maybe leaving out the Bay Leaf is the reason? Probably not. I just don’t like Bay Leaves. Never use them in any recipes.
Turkey Meatball and Spinach Soup
Meatballs…. do I have to say anything else to convince to make the Turkey Meatball and Spinach Soup? I didn’t think so!
Enjoy your soups all year long!!!
